(1) Raw material processing: Select fresh, plump, non deformed, pest free, and mold free walnut kernels, remove impurities, boil in 10% sodium hydroxide solution for 30 seconds, rinse with water to remove the inner lining, neutralize and protect the color in dilute citric acid solution. Choose high-quality soybeans with large grains, pure color, complete maturity, and no impurities. Bake them at 80-90 ℃ for 6 hours to remove any fishy odor. Gently crush the soybeans, remove the skin with wind force, and obtain crushed Douban.
(2) Pulping: Mix walnuts and soybeans in a ratio of 18:38:46, add twice the amount of water, soak at 50 ℃ for 3 hours, and then grind. When grinding, water weighing 8 times the weight of the raw material needs to be added. Filter the ground slurry through a 100 mesh sieve.
(3) Flour milling: The slurry is first treated with walnut powder colloid mill, and then homogenized twice with an emulsifier or homogenizer at a temperature of 50-55 ℃ and a pressure of 30 megapascals to obtain an emulsion. Concentrate at a vacuum degree of 10-15 kPa until the solid content reaches over 40%, and then proceed with powder spraying. The temperature of the concentrated solution is 40~60 ℃. It is pumped into the high-level tank and dried by spray after entering the centrifugal plate. The inlet air temperature is 150~180 ℃.
(4) Expanded corn: Choose corn with large, plump grains, no mold, and no pests and diseases, and remove impurities. After the corn is appropriately wetted, it is mechanically rubbed to remove the skin and sent to an extrusion continuous puffing machine for puffing. The puffing temperature is 150-180 ℃, the moisture content is 10% -16%, and the pressure is 0.98 megapascals to obtain the semi-finished product. Grind and sieve through 80-100 mesh to obtain corn puffing powder.
(5) Finished product processing: according to the ratio of walnut: soybean: corn=44:21:35, mix the corn puffing powder with spray drying powder, screen, empty or pack with nitrogen. Depending on product requirements, fortifiers such as vitamin A and vitamin C can be added to make fortified nutritional foods.
