The necessity of pollution regulation in the catering industry - As a traditional service industry in China's tertiary industry, the catering industry has gone through four stages of reform and opening up, quantitative expansion, scale chain development, and brand enhancement strategy, and has achieved rapid development. With the increasing number and scope of catering enterprises, their pollution of the atmospheric environment is becoming more and more serious. Complaints against catering enterprises have become the main content of urban complaints. Although most companies have certain pollution prevention and control measures, some companies do not follow the requirements in order to save costs. Due to the large and dispersed number of enterprises, it is difficult to achieve monitoring effects solely by manpower. It is imperative to use technological means to establish an online monitoring system for oil fume, so as to ultimately achieve comprehensive coverage of pollution source monitoring.
The main problems currently faced by the regulation of cooking fumes in the catering industry include:
A、 Lack of regulatory information: Due to the large and scattered number of catering enterprises in cities, it is difficult to monitor whether the oil fume purification facilities of catering enterprises are used and whether they meet the standards after purification. And it cannot timely collect key information such as emission concentration and purifier cleanliness, which cannot guarantee timely detection of emission problems.
B、 Outdated monitoring methods: According to the national standard method, the traditional sampling method is used to monitor the concentration of oil fume emissions. This method has a long detection cycle, high cost, complicated steps, and high requirements for on-site testing conditions. It is difficult to meet the needs of oil fume supervision and inspection in the catering industry and on-site law enforcement monitoring. Moreover, it cannot achieve multi-point monitoring and real-time online monitoring, which makes it impossible to accurately grasp the oil fume emissions situation of the entire catering industry.
C、 Lack of enterprise information: The registration of catering enterprise information is incomplete, the search methods are outdated, and the work is cumbersome.
D、 Limited regulatory time: Previously, law enforcement departments of problematic enterprises increased their frequency of on-site visits, but even after law enforcement personnel left, catering enterprises continued to operate in violation of regulations, making it difficult to regulate and lacking effective evidence from historical data.
E、 The work is tedious: relying solely on manual inspections increases the burden on management personnel, and monitoring the cleaning of purification facilities requires uploading pictures and other means, resulting in numerous files that are difficult to classify and query.
F、 Poor efficiency: Data needs to be returned to the office for organization.
The oil fume monitoring system is a high-performance system developed to meet the special needs of the environmental protection industry, utilizing IoT sensing technology, GPRS wireless communication technology, etc. It integrates oil fume monitoring, data collection, and data transmission. Online monitoring of indicators such as oil fume emission concentration, purifier operation status, and fan operation status of catering enterprises can be carried out, thereby unifying the working condition data of oil fume treatment facilities with oil fume concentration data, providing a dedicated oil fume monitoring equipment for environmental protection bureaus to directly, effectively, and truthfully monitor the oil fume emission status.
1. Monitoring system
1) Monitoring equipment: including oil fume detection module (oil fume concentration detector, working condition sensor) and oil fume monitoring instrument host. The oil fume concentration detector monitors the real-time concentration information of oil fume in the exhaust gas, and is connected to the oil fume monitoring host through RS485 bus; The working condition sensor collects the operating status and connects it to the main unit of the oil fume monitoring instrument through an analog interface; Real time collection of data from the oil fume concentration detector, as well as the working status of the flue fan and oil fume purifier, and uploading the data to the monitoring center through the transmission network.
2) Transmission network: Based on the installation site conditions of the restaurant kitchen equipment, GPRS/3G/4G wireless communication method is adopted.
3) Monitoring Center: The platform software mainly completes functions such as data collection, storage management, recall queries, statistical reports, WeChat alarms, etc.
4) The Environmental Protection Bureau has a law enforcement department responsible for conducting on-site inspections and supervision of enterprises with abnormal or excessive monitoring. Law enforcement officers use mobile terminals to access real-time information on the emissions of catering enterprises and the use of purification equipment within their jurisdiction, providing clues for law enforcement. Portable automatic infrared fume monitoring devices are used on site for sampling and analysis, and on-site testing records are processed to provide a basis for on-site mobile law enforcement.
5) Catering enterprises rectify their purification equipment and regularly clean and maintain it based on monitoring data from the platform, in order to achieve emission reduction goals.
2. Functional features
1) The online and information-based supervision measures for catering enterprises have improved the efficiency of centralized management of decentralized catering enterprises, reduced personnel pressure on environmental supervision departments, and enhanced the comprehensive and real-time grasp of information such as oil fume emissions and purification facility work status of catering enterprises.
2) Scientification of mobile law enforcement and improvement of law enforcement efficiency: At the law enforcement site, rapid detection of oil fume concentration is carried out based on portable automatic infrared oil fume monitoring devices. Through intelligent mobile law enforcement terminals, the data generated during the law enforcement process and the punishment process are uploaded in real time and recorded in the platform's information management system for storage and management, effectively improving law enforcement efficiency and basis.
3) The informatization construction of regulatory measures for catering enterprises will help improve their awareness of environmental responsibility and effectively implement their environmental responsibilities.
4) Informationization of operation and maintenance management provides evaluation data foundation for operation and maintenance evaluation work: Electronic archive management of operation and maintenance management work is beneficial for the Environmental Protection Bureau to evaluate the quality and workload of operation and maintenance work, and can also provide traceability for equipment failures.
5) Users can choose the networking function to remotely transmit on-site data to the environmental protection bureau management platform.
6) The oil fume probe has an easy to remove function: when the oil fume probe is blocked, it can be removed and cleaned regularly.
The online oil fume monitor is an instrument independently developed by Wenlang that can achieve real-time monitoring of oil fume emission concentration. It mainly consists of a collector body, a display screen, and an oil fume sensor. The collector integrates GPRS wireless communication module and works in real-time online and automatic reporting mode. The collector is equipped with a dedicated interface for oil fume probes, which is used to connect the probes. The collector collects raw data of oil fume by controlling the probe, reads the raw data collected by the probe, and performs comprehensive calculations to finally obtain the concentration value of oil fume. The data can also be viewed directly on the display screen. The oil fume online monitoring system consists of real-time data monitoring, historical data query, basic information management, user information management and other functions, displaying the real-time monitoring status of various catering enterprises.
The system utilizes sensor technology, automatic control technology, computer technology, and video surveillance technology to integrate various indicators into the framework of the Internet of Things system. Through intelligent sensors, it wirelessly collects on-site environmental information (air temperature and humidity, oil fume concentration, etc.). Users can real-time grasp various environmental information on site through information terminals such as monitoring room computers, timely obtain abnormal alarm information, and remotely control corresponding equipment based on monitoring results.
3. Application Fields
A. Online monitoring of cooking oil fume parameters (concentration, temperature, humidity, pressure, discharge flow) emitted by catering units such as restaurants, hotels, and government canteens.
B. Online monitoring of non edible oil fume emission parameters (concentration, temperature, humidity, pressure, emission flow rate) in industry, as well as measurement of oil fume parameters (concentration, temperature, humidity, pressure, emission flow rate) in various laboratory oil fume tests and measurement of asphalt smoke. Various places for detecting gases containing oil fume components.
